Because life is never easy…

I’m thinking there’s going to be yet another break in posts here.  Earlier this week I was diagnosed with gestational diabetes after failing both the 1 hour and the 3 hour tests.  Honestly, I’m not sure what this means for the immediate future of PPC.  I do know that this latest diagnosis in an otherwise difficult pregnancy has me quite frustrated.  I’m definitely slacking in the kitchen, lately.
I am hoping that in meeting with the nutritionist, I’ll be struck with inspiration for new healthier meals.
I do have some recipes and recipes with photos on my computer that I am hoping to share with you all, but in all honesty, right now it’s hard for me to look at and think about foods that I can’t eat.

Mmmm… Cake…

This is a post that I’ve been meaning to make for a couple days, but my poor son has been so sick.  On Halloween I checked my email and was met with quite a wonderful surprise!  I subscribe to a daily menu from http://en.petitchef.com/  I’ve seen some pretty tasty recipes come to my mailbox, and one day would like to make some of them.  Well, on Halloween, I open the email and see a that the starter for the daily menu is a wonton soup.  I figure I’ll check it, I do love wonton soup.  (especially mine)  And hey, maybe there will be some wonton wrapping tips… that is one thing that I have a really hard time with.  :-\  So I glance at the photo included, and wait… that looks familiar!  Wait!  That’s MY wonton soup!  Woot!  I ran and grabbed my husband and dragged him to my computer.  I grabbed my daughter and showed her.  They both congratulated me.  Happy day indeed!
So, I just wanted to say a little thanks to PetitChef for making my day!

One of those crazy weeks!

When it comes to weekly shopping, I am normally SO organized it’s not even funny.  Wednesday I start meal planning with some ideas that sound yummy, or include any special requests.  I start to go through coupons and check out competitor grocery stores, just to see what they have.  I’m not sure why since I never seem to deviate, and am such a creature of habit.
Thursday my regular grocer posts their sales online, so I jump online that morning and start checking to see what’s good.  I spend all day thinking of good sales items and recipes to accompany them.  I compose my list, really, in two columns.  One side is regular household items, and food staples that we need.  The other is just menu planning related.
I know, I’m probably not right in the head.  I do obsess over it, but I’m okay with it.
Thursday I am continuously glancing online and combing through coupons.
Friday morning I grab my purse, list and green bags.  I drop the kids off at school and head to the grocery store.
I do what I need to and buy what’s on my list.  Sure, I do occasionally spurge and buy treats.  I do look around for snacks and such for the kids.
It works for me.  I shop once a week, and I’m good.  Maybe the occasional mid-week trip for a bakery item or maybe some produce, but that is rare.  It works for me, and I honestly cannot imagine doing it any other way.
Yeah, I have issues.  Like I said, I’m okay with it.
I like knowing ahead of time what I’m buying and what we’re eating and when.  I used to go shopping once a month and I had the entire menu posted on the fridge.
Now life sometimes gets crazy with a husband who works nights and two kids in school and activities.  Some nights I do run short on time to make a specifically planned meal, or something else comes up.  I try to take everything into consideration while planning, but I have no crystal ball, so sometimes the menu gets screwed up.
Something was so off this past week.  I have no clue what.  I guess I was just feeling off.  I didn’t check other store sales.  I only did a quick check through my coupons.  I only meal planned for a few nights… that left me clueless for the rest of the week.  I somehow managed through shopping, after much back and forth-ing over those mystery meals.  I’m still clueless as to when we’re eating what, but it’ll get eaten, right?

I do know that tomorrow I’m making a Roasted Chicken with stuffing and garlic mashed potatoes.  I am very excited for that.  Also this week I have Thai barbecued pork, and a Thai pork soup.  Thai fried rice another night.  The family is looking forward to my spaghetti with meat sauce.  It’s a favorite here, hands down.  I would also like to turn some leftover pot roast into a beef stew.  If I’m ambitious enough that day I’d like to make some bread bowls.

Hopefully this week I can get back on the ball!  :-)
