Garlic Cheddar Mashed Potatoes

These are delicious and go so well with many dishes. They very well may end up on the Thanksgiving table this year!  :D   My family loved them, I hope that yours does too!

Garlic Cheddar Mashed Potatoes

You’ll need
5 large russet baking potatoes, peeled and cubed
5 whole garlic cloves (I loves me some garlic!)
1/4 – 1/2 cup milk
1 cup shredded cheddar cheese
3 tablespoons butter
Salt and pepper

Boil potatoes and garlic in salted water until tender. Drain and return to pot. Add milk, salt and pepper and mash until smooth. Stir in cheese and butter until melted.

This is so easy, it’s almost not right, but the taste… definitely all right!

Buffalo Chicken

You’ll need~
1 tbsp corn starch
1 tsp seasoning salt
boneless skinless chicken
1/4 cup wing sauce

Preheat grill or broiler (I had to broil since it was raining).
Put corn starch and salt in Ziploc. Shake it up. Add chicken, shake again. Add sauce, rub and massage it into the chicken… man I could really go for a massage right now. Cook until the chicken is cooked through and no longer pink in the center.

Bleu Cheese Mashed Potatoes

You’ll need~
Your favorite mashed potatoes, I guess 3-4 cups… I didn’t really measure… I was more excited over the prospect of bleu cheese as no one in my family really likes it. Incidentally I add garlic and sometimes chives or dill to mine.
2 tbsp crumbled bleu cheese
2 tsp bacon bits

Ummm… Combine all and serve. Could it be any easier?

Sloppy Joes And Oven Roasted Potatoes

With trying to adjust to having both kids in school, and juggling extracurricular activities and homework, I’ve been trying hard to come up with quick easy dinners.  This fit the bill and was a huge hit with the kids!

Sloppy Joes

You need~
1 1/2 – 2 lbs ground beef
1 clove of minced garlic
1/2- 1 cup of catsup
1 can of tomato soup
salt and pepper to taste
Hamburger buns

Brown the ground beef in a pan with the garlic. Add the salt and pepper. Stir in soup and catsup. Lower the heat and simmer until slightly thickened. Spoon onto the buns. How easy is that?!

Oven Roasted Potatoes

You’ll need~
Potatoes (I used red skin potatoes, but also like Yukon Gold here)
Olive Oil
Minced Garlic
Salt
Pepper

Wash the potatoes and slice them up. Toss them with olive oil, the garlic, salt and pepper. Bake at 400 degrees for 30 minutes.
