1 cup of mashed fruit
1 tbsp

Combine all in ice cream container. Follow instructions for your ice cream maker, freeze when done.

Rainbow Cake

Rainbow Cake

Rainbow Cake

Rainbow Cake

Rainbow Cake

This cake is so pretty, and so so tasty!

You need~
1 box white cake mix
12 oz clear soda, I used Sprite
1 small box of Jello pudding
Food Coloring

Mix the cake mix according to package directions. Add soda and pudding mix and continue to mix. It will be a bit lumpy. Divide the mix equally into separate bowls and add different colors of food coloring to each bowl of batter. (somehow during this process I mis-counted and ended up with only 5 bowls of batter, and didn’t have enough for purple! In my defense, it was late!)
Pour colored batters into prepared pans randomly, or in a pattern if you like.

Bake according to box directions until tooth pick inserted into center of pans comes out clean. It may take longer because this is a dense cake.
I used 2 9inch pans and it took about 33 minutes.

I think that next time I’d double the recipe to make a higher/thicker cake.

For the frosting, I just made a whipped cream. I had some cream in the fridge and it complemented the density of the cake really well.

This was so good, the kids made sure that there was none left over for a late night snack!

Stir fried beef in oyster sauce

Stir fried beef in oyster sauce

Stir fried beef in oyster sauce

Another simple and delicious Thai dish. I served this over brown rice, as requested by my son. I also made some fried wontons to go with. That recipe will not make it here as it was a complete and total failure… hey at least I can admit when things don’t go as planned!

You’ll need~
1lb round steak
2 tbsp soy sauce
1 tbsp cornstarch
3 tbsp vegetable oil
1 tbsp chopped garlic
1 tbsp chopped ginger root
3 1/4 cups mixed mushrooms… shiitake, oyster, straw, etc…
1/2 can bamboo shoots
1/2 can baby corn
2 tbsp oyster sauce
1 tsp sugar
4 scallions, chopped into smallish pieces
red pepper flakes

Slice steak into long thin strips on the diagonal.
Mix soy sauce and cornstarch, add steak and coat it well. Cover and marinade for a couple hours.
Heat half the oil in a wok (or frying pan). Add ginger and garlic and cook for a couple of minutes. Drain the juice off the steak and toss it in the wok. Stir it up! Cook until the steak is browned and tender, just a couple of minutes. Remove and set aside.
Heat the rest of the oil in the skillet. Add the mushrooms, bamboo shoots and baby corn and stir fry over med. heat until golden brown.
Return the steak to the wok and mix well. Add oyster sauce and sugar. Stir it up. Add the red pepper flakes and toss until it’s all combined. Stir in the scallions and serve!

Sweet and Sour Meatballs

Sorry for the lack of posts.  My son brought home an icky flu.  I took care of him, and nursed him back to health, and of course, I come down with it.  Things were a bit worrisome for a bit.  I was lucky that my darling husband’s schedule worked out so that he was able to take the kids to school and pick them up for me.  I was really incapable of doing much, except for sleeping.  I’d wake to get the kids fed and ready for school and feverishly sleep the day away while they were gone.  I’d wake to hear about their days and look at school stuff and nap some more.  My husband, who works nights, would wake me up before he had to leave.  I’d spend some time with the kiddos, while they both kept feeling my head every few minutes and clucking, “Poor, poor Mommy…” with a sad shake of their heads.  My son frequently apologized for getting me sick… meh, it’s a hazard of the job.  They’d read to me before it was time for showers and then… sweet bedtime.  I’d hurry through making lunches and getting everything ready for school the next day and then pass out in bed again.  Medicines didn’t do much except for making me feel hung over upon waking.
Needless to say I didn’t get much cooking done during those few horrendous days.

Here is a recipe though that is perfect for those days when you just don’t have much time or energy, or both.  It’s all thrown together in the slow cooker, so that makes it even easier!  This is a meal that my kids LOVE and ask for all the time!

Sweet and Sour Meatballs

Sweet and Sour Meatballs

You’ll need~
Meatballs (you choice, I used turkey, but you can use whatever type of meat for your balls you’d like… Don’t ask how many… I just make and cook a ton of meatballs, or you can use frozen, I have when I’m running short on time.)
Dry onion soup mix
A jar of apricot preserves
A bottle of Catalina dressing

Throw everything in a slow cooker for 3-4 hours on high and enjoy! I serve with sugar snap peas and rice.

I have a friend who makes this with chicken thighs. It’s just as good, but my kids prefer meatballs.

Birthday Cake Ice Cream

Birthday Cake Ice Cream

Birthday Cake Ice Cream

I so love my ice cream maker.  Seriously, awesome birthday gift!  I’ve been really enjoying experimenting with it and coming up with some pretty yummy ice creams.  My family has also enjoyed it, of course.  I loved making everything for my kids birthdays from scratch, cakes, cupcakes and ice creams.  For my daughter, I knew she’d love Birthday Cake Ice Cream.  Sure it didn’t fit in with her whole vampire theme, but no one was complaining!  It was some really good ice cream!

You’ll need~
1 cup of whole milk
3/4 cup of sugar
2 cups cream
1 tsp vanilla extract
2/3 cup Funfetti cake mix

Whisk milk and sugar until dissolved.  Stir in cream and vanilla.  Stir in the cake mix, making sure there are no lumps.  Pour it all into your ice cream maker and make according to your maker’s instructions.

Enjoy!

Thanks!

This is a post that I’ve been meaning to make for a couple days, but my poor son has been so sick.  On Halloween I checked my email and was met with quite a wonderful surprise!  I subscribe to a daily menu from http://en.petitchef.com/  I’ve seen some pretty tasty recipes come to my mailbox, and one day would like to make some of them.  Well, on Halloween, I open the email and see a that the starter for the daily menu is a wonton soup.  I figure I’ll check it, I do love wonton soup.  (especially mine)  And hey, maybe there will be some wonton wrapping tips… that is one thing that I have a really hard time with.  :-\  So I glance at the photo included, and wait… that looks familiar!  Wait!  That’s MY wonton soup!  Woot!  I ran and grabbed my husband and dragged him to my computer.  I grabbed my daughter and showed her.  They both congratulated me.  Happy day indeed!
So, I just wanted to say a little thanks to PetitChef for making my day!

Chicken and Pineapple Skewers

Chicken Pineapple Skewers

Chicken Pineapple Skewers

This is, I believe, my son’s most favorite thing ever.  He gets so so so excited if he even sees me touch the wooden skewers… makes me feel bad if I’m looking for something and just moving them.  It has his favorite components… chicken (yum!), pineapple (double yum!) and it’s food on a stick (so much fun!)!

You’ll need~
2 lbs chicken breast, cut into 1″ cubes
1/2 cup Teriyaki sauce
2 Tbsp veggie oil
1 can (20 oz) pineapple chunks, drained, save 2 Tbsp of the juice

Combine teriyaki sauce, pineapple juice and oil.  Marinade the chicken in this for at least an hour.  Make sure you soak the wooden skewers in water for at least 15 minutes so they don’t burn.  Skewer the chicken onto skewers alternating with the pineapple chunks.  Grill or broil, turning skewers, until done, about 15 minutes.

Cheesy Spinach Tortellini

Cheesy Creamy Spinach Tortellini

Cheesy Creamy Spinach Tortellini

This is a great weeknight dinner.  It’s so quick and easy.  The kids love this and chow down… spinach and all!

You’ll need~
olive oil
2 Tbsp butter
2-3 cloves minced garlic
1 cup chicken broth
1 cup heavy cream
tortellini
1 package frozen chopped spinach, thawed
1 cup Parmesan cheese (I use more because I love melty cheese)
flour

Saute garlic in olive oil and butter.  Add the flour and cook briefly.  Whisk in chicken broth and cream.  Using paper towels, squeeze all the liquid out of the spinach.  Toss the spinach and cheese into the cream mixture.  Cook the tortellini and carefully fold it into the mixture.  Season with salt and pepper.
