Cherry Cookies

These cookies were so moist and cake-y.  My family absolutely loved them!  Not only are they super easy, but look how pretty!  They’d make a great Valentine’s Day treat!

An amazing Pot Roast

There is nothing better on a cold day than comfort food.  Yes, it gets cold here in Florida.  We had days where the high was in the 30′s… I know that to some people that’s nothing, but really, it’s all relative.  Not to mention that we don’t have the cold weather gear that people up north have.  My area did get sleet and flurries, which I did wake my children up for at 3am!  My Florida babies kept getting cold and required coming inside for warm snacks.
But yeah, nothing warms the body and soul like some good comfort food.  It’s also a plus if you have the oven on for awhile!

Delicious Pot Roast

Delicious Pot Roast

This pot roast is just SO good.  It also makes for some great sandwiches the next day!

You’ll need~
Pot Roast (no idea now what size it was)
Olive Oil
Salt and Pepper
Mushrooms
Beef Stock
Garlic
Basil

Rinse and pat dry your roast. Rub a lot of pepper and salt into it. Sear it brown on all sides in olive oil in a frying pan. Place in a baking dish. Add mushrooms and stock to frying pan. Simmer for 15-20 minutes. Add a whole bunch of whole garlic cloves. The more the better. I think I added 20 and wanted more, but then again, I am a garlic addict!  Simmer for a few minutes more.   Pour that over the roast, sprinkle with basil. Bake at 275 degrees for 3 hours, flipping it about 1.5 hours in.

It is so good, especially with a side of garlic mashed potatoes!

Chocolate Chip Pancakes

Is there anything better for breakfast on a cold morning than a nice piping hot stack of pancakes?  I mean, really?  Well, maybe if it’s a piping hot stack of chocolate chip pancakes.  The kidlets were thrilled!  Chocolate chips IN their breakfast!  I was the best mommy around… up until I asked them to clean their rooms!

1/4 tsp salt
2 Tbsp baking powder
3 eggs
1/3 cup oil
1 cup of milk (more if you like a thinner batter)
Chocolate chips

Mix all the dry ingredients.  Mix all the wet ingredients.  Combine the wet and dry ingredients.  Cook over medium heat until bubbles form.  Drop some chocolate chips on and flip.  Cook until golden.

Serve while still warm and the chocolate chips are deliciously melt-y!

A couple of nibbles

Here are a couple of recipes for finger foods that I absolutely love!

Deviled Eggs and Cold Veggie Pizza

Deviled Eggs and Cold Veggie Pizza

The first is my stepmom’s cold veggie pizza.  Seriously, she knows that if we’re having a get together, she’s bringing this.  I think I could live on it!

Cold Veggie Pizza
You’ll need~
2 packages of crescent rolls
1 cup shredded carrots
1 cup shredded broccoli
8 oz cream cheese
1 package of powdered ranch dressing mix
1/2 cup miracle whip salad dressing
1 cup shredded cheddar cheese

Flatten out the crescent rolls on a cookie sheet.  Bake for 8-9 minutes.  Let cool.
Mix cream cheese, miracle whip and ranch mix (to taste).  Spread on the baked crescent rolls.
Put veggies and cheese on top, pat lightly.
Cover and let set.
My stepmother does steam the veggies for a few seconds in the microwave if she’s making it for me because I’m allergic to raw carrots and raw broccoli.

My family loves deviled eggs, especially my son.  You really do have to watch him, because once they are put out he will linger near the food until they are gone.  It doesn’t take long for him to inhale them either.

You’ll need~
1 dozen hard boiled eggs
2 tsp mustard
1/3 cup mayonaise
salt and pepper
paprika

Peel the eggs and slice them in half lengthwise.  Carefully remove the yolks and place in a small bowl.  Place the white on a serving platter.
Mash the yolks with a fork, add mustard and mayo with a bit of salt and pepper.  Combine well.  Place the mixture into a large ziploc and snip the corner with a pair or scissors.  Squeeze the yolk mixture into the egg whites.  Sprinkle with paprika.

Enjoy!
