A couple of nibbles

Here are a couple of recipes for finger foods that I absolutely love!

Deviled Eggs and Cold Veggie Pizza

The first is my stepmom’s cold veggie pizza.  Seriously, she knows that if we’re having a get together, she’s bringing this.  I think I could live on it!

Cold Veggie Pizza
You’ll need~
2 packages of crescent rolls
1 cup shredded carrots
1 cup shredded broccoli
8 oz cream cheese
1 package of powdered ranch dressing mix
1/2 cup miracle whip salad dressing
1 cup shredded cheddar cheese

Flatten out the crescent rolls on a cookie sheet.  Bake for 8-9 minutes.  Let cool.
Mix cream cheese, miracle whip and ranch mix (to taste).  Spread on the baked crescent rolls.
Put veggies and cheese on top, pat lightly.
Cover and let set.
My stepmother does steam the veggies for a few seconds in the microwave if she’s making it for me because I’m allergic to raw carrots and raw broccoli.

My family loves deviled eggs, especially my son.  You really do have to watch him, because once they are put out he will linger near the food until they are gone.  It doesn’t take long for him to inhale them either.

You’ll need~
1 dozen hard boiled eggs
2 tsp mustard
1/3 cup mayonaise
salt and pepper
paprika

Peel the eggs and slice them in half lengthwise.  Carefully remove the yolks and place in a small bowl.  Place the white on a serving platter.
Mash the yolks with a fork, add mustard and mayo with a bit of salt and pepper.  Combine well.  Place the mixture into a large ziploc and snip the corner with a pair or scissors.  Squeeze the yolk mixture into the egg whites.  Sprinkle with paprika.
