I was looking for a way to shake up the standard chicken recipes. My family was getting bored with all the usual stand by recipes. We needed change! I decided to stir things up a bit and add a favorite (mashed potatoes) to some chicken breasts that I had in the freezer. The result was a hit!
You can simply use your favorite mashed tater recipe… I happened to have some leftover, so used those rather than make a whole batch. Another reason why it’s helpful to save leftovers! Sure I was thinking of making some potato pancakes, but this was yummy too!
You’ll need~
mashed potatoes(here’s my rough recipe… I don’t measure with these, so I apologize!)
a couple of good sized baking potatoes, cubed
some whole milk
butter… a couple tbsp?
garlic… a couple cloves
salt and pepper
I also sometimes add some grated cheese to my mashed taters
You’ll also need~
4 bone in chicken breasts with skin
Preheat the over to 400 degrees.
Bring the potato cubes to a boil in a pan of water. Simmer until fork tender. Drain. Add the butter, garlic, milk, salt and pepper to the potatoes. Mash those babies up real good. Let them cool a bit.
When you can handle them, divide them into four equal parts.
Run your finger gently under the chicken skin to loosen it from the meat, but do not completely remove it. Stuff each pile o’ potatoes under the chicken’s skin. Press it around so it’s pretty even under there… no one wants lumpy oddly shaped breasts.
Place them in a pan. Drizzle with olive oil and sprinkle them with salt and pepper.
Bake until chicken is tender and juices run clear… this usually takes about 40-45 minutes.
