Blueberry Ice Cream

Okay, as before, I didn’t get any pics because it was a huge hit with my family. I will definitely take it as a complement.  I so love my KitchenAid Ice Cream Maker Attachment!

You’ll need~
3 cups of half and half
1 14oz can of sweetened condensed milk
1 cup of mashed fruit
1 tbsp

Combine all in ice cream container. Follow instructions for your ice cream maker, freeze when done.

Birthday Cake Ice Cream

I so love my ice cream maker.  Seriously, awesome birthday gift!  I’ve been really enjoying experimenting with it and coming up with some pretty yummy ice creams.  My family has also enjoyed it, of course.  I loved making everything for my kids birthdays from scratch, cakes, cupcakes and ice creams.  For my daughter, I knew she’d love Birthday Cake Ice Cream.  Sure it didn’t fit in with her whole vampire theme, but no one was complaining!  It was some really good ice cream!

You’ll need~
1 cup of whole milk
3/4 cup of sugar
2 cups cream
1 tsp vanilla extract
2/3 cup Funfetti cake mix

Whisk milk and sugar until dissolved.  Stir in cream and vanilla.  Stir in the cake mix, making sure there are no lumps.  Pour it all into your ice cream maker and make according to your maker’s instructions.

Enjoy!

Cherry! Cherry Ice Cream!

My family so loves my homemade ice cream so much that I never seem to be able to get a photo of it before it’s gone. I guess I’ll take that as a compliment, but I do apologize for not being able to share with all of you. I guess, you’ll just have to settle for a recipe instead!

You’ll need~
1/4 cup Bing Cherries, pitted and halved (admittedly I used more… maybe about 1 full cup because my family is so addicted to cherries.)
2 eggs
3/4 cup sugar
2 cups heavy cream
1 cup milk

Place cherries in a bowl and cover. Place in refrigerator.

Whisk eggs until light and fluffy. (I heated them just slightly, not enough to cook them, but I’m not fully comfortable eating raw eggs.) Slowly whisk in sugar until well combines. Add cream and milk, whisk it all to blend it well.
Transfer to your ice cream maker and follow the directions.
When the ice cream has stiffened and is almost done, add the cherries.

Delicious Strawberry Ice Cream

Okay, so for my birthday, I got the Ice Cream Maker attachment for my Kitchen Aid Mixer. Goodness, I love it, and can use the Wii Fit I also got to burn off all the calories I’m sure to put on from all the ice cream that I’ll be consuming. And I am not really an ice cream person, but this makes me so happy! Oh, and apologize in advance for the lack of photo. I made the ice cream and we couldn’t wait for it to firm up, so it looked like a milk and strawberry stew. Then we ate it all, so there were no photos to be had, but it was so darn good. I’ll be making it again, and hopefully I’ll get photos next time? So maybe this should be called cold milk and strawberry stew instead?

You’ll need~
1 pint of strawberries, chopped finely
1 tbsp lemon juice
2 eggs
1 cup sugar, divided
2 cups of heavy whipping cream
1 cup milk
1 tsp vanilla

Combine Strawberries, lemon and 1/4 cup sugar. Place in refrigerator for at least an hour.

Beat the eggs until light and fluffy, add milk. Scald these two items. Beat in remaining sugar and vanilla. Let cool completely and store in refigerator until completely chilled.

Combine the two mixtures.

Gently stir in cream.

Pour into ice cream maker.

Really, you should place it in an air tight container and let sit in the freezer for a couple hours to firm up. We’re not good at waiting. Or maybe it’s because I live in the oppressive heat that is Florida. Who knows. Either way, it’s tasty stuff!
