Sorry for the lack of posts. My son brought home an icky flu. I took care of him, and nursed him back to health, and of course, I come down with it. Things were a bit worrisome for a bit. I was lucky that my darling husband’s schedule worked out so that he was able to take the kids to school and pick them up for me. I was really incapable of doing much, except for sleeping. I’d wake to get the kids fed and ready for school and feverishly sleep the day away while they were gone. I’d wake to hear about their days and look at school stuff and nap some more. My husband, who works nights, would wake me up before he had to leave. I’d spend some time with the kiddos, while they both kept feeling my head every few minutes and clucking, “Poor, poor Mommy…” with a sad shake of their heads. My son frequently apologized for getting me sick… meh, it’s a hazard of the job. They’d read to me before it was time for showers and then… sweet bedtime. I’d hurry through making lunches and getting everything ready for school the next day and then pass out in bed again. Medicines didn’t do much except for making me feel hung over upon waking.
Needless to say I didn’t get much cooking done during those few horrendous days.
Here is a recipe though that is perfect for those days when you just don’t have much time or energy, or both. It’s all thrown together in the slow cooker, so that makes it even easier! This is a meal that my kids LOVE and ask for all the time!

Sweet and Sour Meatballs
You’ll need~
Meatballs (you choice, I used turkey, but you can use whatever type of meat for your balls you’d like… Don’t ask how many… I just make and cook a ton of meatballs, or you can use frozen, I have when I’m running short on time.)
Dry onion soup mix
A jar of apricot preserves
A bottle of Catalina dressing
Throw everything in a slow cooker for 3-4 hours on high and enjoy! I serve with sugar snap peas and rice.
I have a friend who makes this with chicken thighs. It’s just as good, but my kids prefer meatballs.
